Tasting Notes: Sweet and chocolatey - chocolate covered dates.
Chirinos is a magical place, a community nestled on the top of a ridge in northern Peru, almost to the Ecuador border. A Coop of 816 members who grow their own coffee, and leverage the cooperative for third party certifications, social programs, financing, and educational programs.
When I first visited I was blown away by the scope of the agricultural training that they do, including composting, raising chickens, pigs, and guinea pigs, along with vegetable plots and shade trees. We toured the farm of two brothers who were trying to grow everything that they ate within their farms. Guava, Limes, Banana, onions, sweet potatoes, corn, all of it, they had even built ponds to farm trout, for Peru's famous ceviche. The team in Chirinos has developed a dynamic system of farming that goes far beyond just growing coffee.
If you ever get the chance you should visit, oh and definitely try the ceviche.
