When Dan first went to Finca Palmilera in 2012, he was struck by the passion and meticulous detail that the farm and wet-mill (where they process the beans as a natural) took with each lot. This family-run operation was co-founded by seven siblings, and they all have a big hand in coffee production.
The geisha trees planted at Finca Palmilera came directly from Panama. The stewards of Finca Palmilera believe that the quality of the fruit is what imparts flavor to the beans, so they choose which seeds to replant by selecting the best tasting cherries.
Due to its unique location, the Palmilera mill benefits from warm mornings and cool afternoons, leading to longer drying times, and more intense flavor in these natural process coffees.
We recommend using this coffee for pour over, but as always it will be delicious with whatever your brewing method of choice is.
