Tasting Notes: Plush, and mellow with notes of candied pear.

In Peru's northern region of Cajamarca, the mountain-top town of Chirinos is regaled as one of the best coffee producing areas in the entire country. Sergio Palermo and his wife Blanquita are the owners of the "Los Alisos" Farm, and are members of the La Prosperidad de Chirinos Cooperative, a member-run community of coffee farmers. Sergio and Blanquita had the distinct honor of being the first producer ever to sell their coffee as a micro-lot from the cooperative. It was my great pleasure to be the receiver of Los Alisos Farm's winning micro-lot in 2016, and to be drinking Sergio's coffee once again, now. 

The Los Alisos community is incredibly self-sufficient and dedicated to regenerative farming practices, with programs stretching from compost production, animal husbandry, and agroforestry management. Sergio and his practices are so respected, in fact, that he has become known as a teacher of these methods to other farms and cooperatives throughout Latin America. 

The farm's exceptionally cool climate, at 1800 meters elevation, and the care Sergio and Blanquita dedicate to producing their beans, comes through in the smooth, sweet flavor of this coffee.
