Dan first learned about Las Lajas while judging the United States Barista Championship in 2009. Las Lajas coffee is known for its quality and flavor, and was regularly used by USBC finalists. Las Lajas was also one of the first certified organic coffee farms in the world.
Our Las Lajas SL-28 is a “Red Honey” process, which means the coffee fruit is not moved until the second day after picking, when it's then moved twice daily for 15 days. This helps achieve a particular kind of fermentation, which leads to even fruiter flavors than a regular honey process coffees.
The coffee varietal SL-28 comes from Kenya, and is known for its “cola-like” acidity. SL-28 was developed for its drought resistance.
We recommend using this coffee for pour over, but as always it will be delicious with whatever brewing method of your choice.
